
I chose to make these carrot muffins due to the secret ingredient pomegranate molasses. I had recently purchased the molasses for another Dorie recipe and I was looking for other recipes to use it. This carrot muffin recipe is flavored with ground ginger, pomegranate molasses, vanilla, and orange zest. I added raisins as my dried fruit and I topped my muffins with the sunflower seeds. These were very tasty and tender muffins that everyone enjoyed. I did not particularly detect the pomegranate molasses especially with the zest of an orange which really came through. I only used one tablespoon so maybe next time I will try more.
By the way, you can make your own pomegranate molasses by reducing pomegranate juice and thickening it with a little cornstarch. To see what others thought head over to Tuesdays with Dorie.

Good tip with the pomegranate syrup! I didn’t use any but my orange was so flavorful I am not sure it mattered haha. These surprised us with how delicious and moist they were!
