Tea and Honey Madeleines

We have made several madeleines over the years on Tuesdays with Dorie, this latest version comes from Baking with Dorie. This was an interesting recipe in which butter is melted and cooked with the tea of two tea bags. I cooked until the butter was browned. The recipe called for the zest of a clementine or Meyer lemon but I had a regular lemon at home so I just used that. There is the addition of one tablespoon of honey which I could not taste. Dorie suggests that you measure out the browned butter to 6 tablespoons which I did as I had extra. I did not end up adding the brown bits and that might have been a mistake, we could not taste any of the tea. I baked my madeleines for 10 minutes which might have been too long since I had browned bits. They tasted good anyway even though we couldn’t taste the fancy bits.   1. seems to be mixed results on the flavorings in this one. mine also got more browned than I was expecting, but the texture was still good.
