Cauliflower Tabbouleh

Shopping for the ingredients for this cauliflower tabbouleh I found this bag of cauliflower pearls which was begging me to buy. It just seemed so easy to open and pour and I didn’t have to wash the food processor. Sold! I followed the recipe as written except for the mint, my husband does not like mint. I used the juice of one lemon, mine was big and juicy and 2 tablespoons of olive oil like Dorie recommended. I served this with Dorie’s Whip-It-Up-Quick Cornbread and chicken. It was a nice meal.   2. Oh this is interesting – like pearl couscous! Mine was very much like regular couscous – much smaller “grains” – but I love this version too!
