Think Orange! Pumpkin Pie Muffins

I Heart Cooking Club

Celebrating October with the color orange–make an Ellie Krieger recipe featuring or including orange-hued ingredients.  For this challenge I chose Pumpkin Pie Muffins  I have been making these muffins since Ellie had a cooking show on the Food Network in 2006.  It has been a while since I have made these and they were a welcomed Fall baked item.

My house smelled so good while these baked.  My husband and I had one as soon as they came out of the oven.  He said they needed raisins which would have been a nice addition.  The pumpkin seeds added a nice textural crunch. These have stood the test of time and 9 years later they are still a winner in our house.

Yum – these look fabulous. And I have come to love Ellie's recipes, even though I had never heard of her before I joined Eating with Ellie.
