Tiger Cakes

“The worst chocolate I ever had was fantastic”.  A quote that Ree Drummond’s father-in-law said on one of her shows.  A sentiment that I wholeheartedly agree with.

This week on Tuesdays with Dorie we made Tiger Cakes from Baking Chez Moi.  As with many of Dorie’s recipes I learned a few new techniques.  This recipe starts off with egg whites whipped up until foamy then you add the almond flour and it becomes paste- like. After the addition of the rest of the ingredients melted butter is added and stirred until incorporated.  This dough/recipe is unlike anything I have ever made before but the results were delicous.  My husband is an almond lover so he really enjoyed them.  I believe his comment was “what’s not to like”.  I froze half of mine to have for a dessert when I have guests.  I think it was cute that Dorie says the melted chocolate is optional, not in my book.

  13. I thought about freezing some of my cakes too, but instead I gave half of them away to my daughter's classroom staff. Yours look delicious!
