Apricot and Pistachio-Olive Oil Cake

Baking with Dorie.

Surprisingly I had all the ingredients for our latest assignment for Tuesday with Dorie. The recipe calls for apricot preserves but we had 3 jars of orange marmalade so I used that instead. I also left out the tea leaves since I only had bags which my husband called dust. I leaned forward on the orange notes with a large orange rind and the marmalade.

This is a plan ahead cake with ingredients that need to come to room temperature but other than that it was easy to put together. I was worried about a soggy center so I baked for the full amount 42 minutes which worked perfect. I served this as my birthday cake and we all loved it. It was a very different kind of cake, it had depth of flavor and crunch from the pistachios. The cake held up well even the next day. My husband declared it an ‘A’ cake, I guess we are grading now πŸ™‚
