
Here is a dessert that is completely new to me, Swedish Fika Cake. The cake is baked in a spring form pan. I placed some parchment paper on the bottom of my pan and then buttered and floured the pan as directed. The cake base is a butter cake with nearly 2 sticks of butter. It is baked for 30 minutes and then a layer of almonds cooked with butter, sugar, flour and milk is placed on top and baked again for 15 minutes. The top becomes this crispy almond brittle which is to-die-for. My husband wanted to eat all the crispy bits around the edge as he stated that was the best part.
