

We are well aware of the magic of ricotta cheese in baked goods. One of our favorite breakfast items is lemon ricotta pancakes. In this recipe the cake batter is very thick which held up the berries quite nicely. I always fear a soggy cake with fruit but this was not a problem here. The crumb topping has the added crunch of cornmeal which was just genius. Putting on the crumb topping I thought I was over doing the amount but it baked up just perfect. We suspected this was going to be a winner and we were right. This was a delicious recipe especially with the blueberries. Leftovers were just great too. I had not used ricotta in baking that I could recall, so we were pleasantly surprised! So good! What a month 2/2!! ππ

this was really great– i used cherries but go the blueberry route next time.
