

I can’t think of a better way to enjoy the holiday weekend than this ice cream cake. We enjoyed making and eating it. The crust is made of graham crackers, peanuts, butter and sugar. It is chilled in the freezer and then baked until brown. I went with Dorie’s suggestion of vanilla, coffee and chocolate ice cream. The fudge sauce came together easy except chopping 12 ounces of chocolate. Peanut butter fluff was a quick mix of peanut butter, marshmallow fluff and some warm milk. There are six layers in all and takes six hours to make. I did mine a day in advance which worked out well.

The reviews for this were off the charts. It was declared the best dessert ever, also spoken from an ice cream loving family. My husband’s only critique was to have more vanilla ice cream.
