Cheese-Swirl Babka Buns

This week on Tuesdays with Dorie we are baking bread. We have made brioche many times; brioche sticky buns, brioche sandwich buns, and chocolate babka. This recipe is a savory twist on buns. The filling includes ricotta, cream cheese, shallots, scallions, Parmesan, and cheese. I used Gouda cheese for my filling as that is what I had on hand. The topping, cheddar streusel, is made with flour, sugar, butter and cheddar cheese. I added the optional chopped walnuts and Parmesan cheese.

This recipe worked really well for me. I managed to roll my dough correctly and get the buns the same size. The buns rose beautifully and baked up golden brown. I served these as a side to our dinner meal, I only served a half of a bun since they are so rich. We all really enjoyed these and I have plenty in the freeze to enjoy later.
