Cocoa-Cranberry Linzer Tart

Baking with Dorie page 285.

We have made a few things similar to this dessert. We have made Cocoa Linzer Cookies from Baking Chez Moi and Thanksgiving Bars from Dorie’s Cookies. This is the first time we have made a linzer tart. The cocoa dough includes all-purpose flour and almond flour, cocoa and chopped chocolate. The filling includes fresh cranberries cooked with raspberry jam and sugar. I included the optional fresh raspberries which gives it an interesting look after baked. These combinations of flavors are sort of hit and miss with my family. My husband thought this recipe a little too bitter for him between tart flavors and dark chocolate. I enjoyed making and eating this one. I was really scared about getting it out of the pan but luckily I did not have any issues. I don’t think this one will be making a repeat in my house but there is always another recipe coming since we are baking from two of Dorie’s books.   4. I used the fresh raspberries too and mine was bumpy and split in places…oh well! I think I would still add them in as everyone loved it. Sorry your husband wasn’t a fan..I used mini milk chocolate chips since I had those on hand…maybe that could have made a difference rather than the dark.
