Blueberry Lemony Yogurt Muffins

I have been struggling to get back into the swing of blogging since I returned from vacation. I have been baking right along but writing about it seems to be the issue. A new wrinkle this week my son moved out and I am now officially an empty-nester which seems to be particularly challenging for me. From Baking with Dorie, we are making Lemony Yogurt Muffins and I chose to add blueberries like Dorie suggested. This was a very thick dough but held up to the berries quite nicely. These were a little tricky making them for breakfast due to the room temperature ingredients. I left my eggs out overnight but the yogurt went in “straight from the fridge” as I did not have another option, it was fine. These were well liked by the family including my son. Bake and carry on…

    Oh, Empty Nest is such a real thing…it’s such a strange thing…one day you are all involved and the next you aren’t so much…after changing all those diapers and making all those meals, and don’t forget all that laundry! LOL. It takes a bit of getting used to. Your muffins look beautiful. I’m sure your cooking/baking will be a big lure to bring everyone around the table as often as possible. xo

  3. Awe Diane…I feel you! The empty nest chapter is a little rough in the beginning..such a noticeable change in the day to day activities! I promise it will get better! Hang in there…and keep baking!! My kids still love to be part of the “tasting group”…and they are 28 and 31! Side note…interesting my batter was like yours…on the thicker side. Sounded like a few others had wet batter 🤷‍♀️
