Dorie gave us a choice to make mini mads with a mini muffin tin or full-size madeleines, I went with the latter. My husband does not care for madeleines much so he was not looking forward to them but guess what he declared these his favorite out of all the madeleines I have made. My other guests enjoyed these too and they quickly disappeared. I guess coffee and cinnamon were the winning combination. I managed to burn a few of mine, Dorie suggests 12 to 13 minute cook time but I think it needs 10 minutes or less. A make again recipe for sure. These are perfect – such a lovely hump! And I agree, madeleines need only 9-10 minutes when I bake them in regular tins.
