Scones Pudding

Slicing scones into thirds was a little tricky.
Lemon curd ala Trader Joe’s.

We were suppose to have leftover scones to make this one but my hubby ate all the scones on the first go around. I happily made another batch as they are easy to put together. I made them a day in advance and let them sit out over night, viola stale scones. Bread pudding is one of my husband’s favorite desserts so he was looking forward to it. This is actually quite a rich dessert with heavy cream, whole milk, eggs, lemon curd and scones. We enjoyed all the fall flavors of raisins, apple and cinnamon. My husband thought it needed some texture like from nuts. We made more than 8 pieces as it was a heavy dessert. Our son enjoyed leftovers for breakfast the next day.
