Glenorchy Flapjacks

Dorie describes these as “your favorite chewy oatmeal cookie or the energy bar of your dreams”. My mother-in-law saw the picture of these and thought they looked delicious so of course I made them for her when she came for dinner. I was lucky that I had all the ingredients for this one including the brown rice syrup that I bought for another Dorie recipe in the past and the sesame seeds which I have a one pound bag of, a lifetime supply. All the dry ingredients get stirred together. The wet ingredients of butter, brown sugar and brown rice syrup are brought to a boil then poured over the dry ingredients. The mixture goes into the pan, patted down, sprinkled with sesame seeds and baked. After they come out of the oven, the bars are scored and cooled.

Well, these cookies were a big flop in our house, too much ginger and too chewy were the comments I got. I was asked to take these to work. Yikes, I guess chewy, thick oatmeal cookies were not wanted in my house. The next day I shared them with my work mates and they loved them.     Sorry these were a flop in your house. We liked these chewy oatmeal treats at my house and even used some of them as granola bits. I made mine without the ginger and sesame because I didn’t have it and knew my household would reject them with ginger. If you try them again, I suggest leaving out the ginger.

  3. Your picture is very similar to mine haha…I was so glad I took this one before I separated the squares because mine ended up a bit rustic and not with crisp lines haha. We liked these but I would agree that they didn’t have the taste or texture like an oatmeal cookie.

    We love ginger so this was a big hit at our place. It’s funny what works at different times at different homes. Your bars do look spectacular. You had me giggling at the thought of a one pound bag of sesame seeds…they weigh nothing so I can’t even imagine how many are in a one pound bag! Too fun.
