Dorie’s Cookies

For this week’s cookie I had to ignore Dorie’s recommendation not to use almond flour. I have a 3 pound bag of almond flour that I need to use before it expires. The shredded coconut is the only texture my cookies will have. It occurred to me later that I could have rolled them in nuts before I put them in the oven, something I can try next time. I am also happy to have another gluten-free recipe on hand. My husband declared these the best macaroons I have made which is saying something given all the cookies I bake. The whole family loved these especially the chocolate lovers. I will have to try these again with the almond pieces and some of the other fillings Dorie suggests. Another cookie winner in our house.     Interesting idea about rolling them in nuts, that would have been a big hit here, they are wild about nuts. I was a little unsure on the color of mine as she said they wouldn’t have much color but the bottoms would be brownish so I was happy to see mine look light colored like yours. These were so easy!
