Drop-Biscuit Peach Cobbler

Stone fruit is in full swing this time of year. I chose to be a purist and make mine peaches only, Dorie’s recipe includes optional blueberries. The drop biscuits were meant to have spaces between but mine fused into one giant biscuit. I thought this was a lovely fruit dessert. My husband did not like the runny fruit juice in the bottom and thought it should be thicker but I did not mind it. We served this with whipped cream.   1. looks great. mine also fused into one giant biscuit and i wondered if maybe i should have used a bigger dish, but i also didn’t really mind.

  2. I think if you had some spaces between the biscuit part, more fruit juice would have cooked down (that’s what happened with mine). I didn’t know if mine were supposed to join together but they didn’t – I love the look of yours that did!)

  3. The crust-like flat topping its charming. Who says it has to be broken up? I wonder whether or not you add cornstarch to the peaches.

  4. My biscuits fused like yours but I didn’t have a lot of juice so maybe it was the peaches. I used berries but also blueberries and cornstarch which might have helped. I kind of thought it was suppose to cover the top…so I dropped mine all close together. 🤷‍♀️
