
This week on Tuesdays with Dorie is another bar recipe that I think counts as cake and not as a cookie. I am familiar with buckwheat flour (we enjoy buckwheat pancakes) but I usually don’t bake with 100% buckwheat. Dorie describes these as “pleasantly dry and grainy texture” and she is right they have a sandy-like texture. These bars aka cake did not win over the family. My husband who likes all things Dorie did not care for this recipe but that has not stopped him from eating them:) I did like the unique flavor and texture but not enough to want to make them again. The addition of chocolate was enjoyed by all and I wonder if I had put on the optional chocolate glaze if that would have made a difference. The one thing I would not do again is put on the egg wash which turned into a chewy unpleasant texture on top. To see what others thought head over to Tuesdays with Dorie.
I agree…wouldn’t do the egg wash on top again. Just didn’t do anything for the bars in my opinion and the cross hatching just disappeared haha. I might add the chocolate glaze on top though…that might be a good addition next time.

Yes, I agree with your assessment of these 100%. These bars were ok, but no more.
