Fried Potato Crackers

This week on Tuesdays with Dorie we headed to the Cocktail section of Dorie’s Cookies. These crackers are made with potato flakes, an item I don’t think I have ever purchased before. Dry ingredients of flour, potato flakes, baking powder are mixed together with a little butter, salt, an egg and hot water to form a dough which is chilled in the refrigerator twice. These are definitely a plan ahead cracker. The dough is rolled thin and cut into what ever shape you want. Frying is its own specialty and one I usually make my husband do. I managed to pull this off correctly I think. My husband said “it tastes like a potato cracker” and he didn’t know what I was making. The down side is I made my house smell like olive oil. My son really enjoyed them, he declared them the best dessert ever, yes dessert. He dipped them in chocolate sauce and my husband said I needed to add this to the blog.   1. Yours are perfect. I shallow fried mine (I just won’t deep fry in my house) and they were just ok. I’d rather eat chips LOL!

  3. i totally skipped on on these bc i didn’t want to buy potato flakes or to fry. yours do look quite appealing though! šŸ™‚
