Tropical Tartlets

This month on Tuesdays with Dorie we have had a tropical theme; mango, lime and coconut. Given that none of us can travel beyond our own backyards we are traveling with our food adventures. These tropical tartlets from Baking Chez Moi live up to their name. The filling is comprised of mango, eggs, sugar, coconut, rum, lime juice and zest, honey and a pinch of red pepper flakes which is buzzed in a food processor until smooth. Once in the shells the filling is topped with additional sweetened coconut and baked. Mango is one of my favorite fruits, I can eat it in any way, shape or form so I was really looking forward to these. My husband thought they tasted like lemon which I thought was funny especially since his least favorite fruit is mango. I made one sans coconut for my son. Another make again recipe:)
