Cherry Clafoutis

Around My French Table page 452

I dusted off my copy of Around My French Table by Dorie Greenspan for this lovely seasonal treat. I love cherries and look forward to them every year. I am always looking for recipes that use fresh cherries. The recipe calls for whole-cherries not pitted but I was serving this to older folks and I did not want anyone to choke on a pit so I pitted mine. According to Dorie this is considered a cake but it is more like a pudding, a very eggy one at that. The ingredients are: eggs, sugar, vanilla, flour, whole milk and heavy cream. I am not fond of eggy type desserts so this one did not do it for me but the rest of the family enjoyed it.
