Little Rascals

I voted for these jam filled sandwich cookies because my husband loves jam, I had jam to use up and I had all the ingredients to make them, a win-win-win. The German name for this cookie is Spitzbuben translated as little rascals. This is a new cookie for me. I made one substitution, my husband dislikes walnuts so I used pecans. I filled half of the cookies with strawberry jam, pictured above, and half with apricot jam. The recipe got thumbs up from my husband and father-in-law, the cookie monsters of the family. They are best the day they are made which is a little snap to them. By the next day they are soft which Dorie did mention. These cookies look good and taste great.
