Speculoos Panna Cotta

We enjoyed last weeks Nutella-Banana Panna Cotta so much that I decided to do Dorie’s Bonne Idee of Speculoos Panna Cotta. I had a package of Lotus Biscoff cookies that I knew would be the perfect crunchy accompaniment. I waited in a long line at Trader Joe’s for my Speculoos Cookie Butter, as well as my other groceries, but I thought it well worth the wait. I have been lucky that I have been able to buy all my essential baking items it is just the basmati rice that is sold out. On to the recipe, I had slightly less than the tablespoon of gelatin required but I ended up with a product that was still set but slightly more creamy, a win win in my book.   1. YUM! I l also used a little less gelatin than the recipe called for because I made 1/3 of the recipe and it’s hard to scale down that much. But I agree, less “gelatiny” was ok!


  2. I am thinking my family would enjoy this version as well since they loved the Nutella one! Glad you are able to get all your ingredients! I think the stores are seeming a bit more stocked so that is encouraging!
