Smoky, Cheesy Cookies

Back to the cocktail section this week on Tuesdays with Dorie. These smoky, cheesy cookies were a hit in my house. Thumbs up all around. We enjoyed this cheese cookie better than Parmesan Galettes which we made last month. All agreed the Parmesan Galettes were too rich. These cookies are a mix of smoked Gouda (I used regular Gouda), sharp cheddar, salt, black pepper, pinch of cayenne, flour and butter. The dough is rolled, frozen and cut into 1 1/2 inch circles and baked to perfection. I served these with our dinner salads. The rest are in the freezer for future snacking needs.
