
“Cat’s Tongues are long, thin oval-shaped cookies that are characteristically browned around the edges and paler at the center.” When I read Dorie’s Bonne Idee for this cookie, Milano-ish sandwich cookies with a chocolate ganache I knew I would make that version. These cookies are quite easy with butter, sugar, salt, vanilla, egg whites and flour. The soft dough is put into a pastry bag, in my case a small tip-top bag, and piped onto parchment paper. I am a bit fastidious and I traced out lines for half-inch wide and three-inch long cookie. That technique worked perfect for me, I think they look Milano-ish. My cookies did not stay crisp. My son thought they tasted better than a Milano, like a pastry or a donut. To see what others thought head over to Tuesdays with Dorie.
