I was a member of a committee at my son’s school. This was a 7 AM meeting so I tried to bring some baked goods mostly muffins when I attended. The attendees were always grateful. This recipe from Dorie’s Cookies caught my eye so I tried these instead of muffins.
These were a soft and chewy oatmeal cookie. The soaking of the dried fruit really made them soft to eat. The only recommendation I have is to chop the apple slices small. Mine were too large and seemed to stick out all over the place. These were delicious and worthy of a breakfast cookie.
As part of cookies and kindness these cookies went several places. I took a dozen to a neighbor whose husband had just passed away. I took another dozen to school for a meeting. And I shared these as with all of my baking with my in-laws.
I used to coordinate teacher breakfasts at school—they'd love when I'd bring in cake! Your cookies sound yummy!

These are on my list for… SOON! I have three other batches of cookies in the house right now but I want to make these because, cookies for breakfast – who doesn't want that?
