Profiteroles, Ice Cream and Hot Chocolate Sauce, Benoit Style

First day of school. First day of high school. First day of a new school district. A day like today needed a special dessert and this week’s selection for Tuesdays with Dorie fit the bill.

There are many components to this dish. I made the cream puff dough, vanilla pastry cream and ice cream (not vanilla) from scratch. I did not make the chocolate sauce. My son likes vanilla so this was his dessert.

I made Coffee Cajeta Ice Cream from David Lebovitz for my husband and I. We loved it. Great coffee ice cream with chopped chocolate layered with cajeta or dulce de leche. Perfect accompaniment to Dorie’s profiteroles.

I made a lot of dishes today but it was well worth it. Try one of all of Profiteroles, Ice Cream and Hot Chocolate Sauce, Benoit Style.
