This dressy pasta “risotto” was delicious and a big hit at our house. It is a fancy macaroni and cheese that is made like risotto. I sauteed one onion in butter until soft, added 3 3/4 cups chicken broth and brang to a boil. Then I added 1 1/3 cups of pasta and simmered 20-25 minutes until almost all the liquid is gone. Lastly added 1/2 cup heavy cream, 1/2 cup Parmesan cheese and 3 1/2 tablespoons mascarpone (I substituted cream cheese because that is what I had on hand and it worked fine). My initial reaction was that this was a lot of work for a pasta dish but the taste was well worth it. I need to make it again as I only got one serving, my husband ate the leftovers:)
