First-of-Fall Apple Bundt

Like Dorie, I try and resist buying apples until all the summer fruit is gone but this September I found a bag of Sugar Bee apples at Costco that was calling my name. I love Sugar Bee apples! When this recipe was selected for our group I already had the apples on hand.

The bundt cake is fall flavored with ingredients like cinnamon, brown sugar, maple syrup and vanilla. My cake baked up nicely in 60 minutes. I was amazed that it came out of the pan perfectly. We love Dorie’s caramel recipes and we thought this was a necessary item and not optional 🙂 And anytime Dorie suggests ice cream as an accompaniment, my husband is going to take it.

After making the caramel sauce, I thought it was too hot and runny to go directly on the cake. I let it cool quite a bit in the refrigerator to get the nice, thick consistency I was looking for. The sauce definitely went well with the cake and ice cream.

I managed to bake this cake the day before we left for our Italian vacation so most of the cake is in the freezer for another time.

To see what others thought head over to Tuesdays with Dorie.

Okay, I should definitely have not seen your photos before my cake was all eaten and gone because now that I see your cake slices with their little ice cream hats, and fancy drizzle, I know that I need to stop by the ice cream shop for a pint so I can do this, too. This cake is so delicious, it ranks right up there with the “Danger! Danger!” category as no way am I eating one tiny slice of this one and handing the rest over to Mark like I usually do. 🙂 Italy…sigh.

Ha ha – I had such a similar reaction to the cake, and to the caramel sauce. What a winner. The sauce was lovely but I was double checking the recipe as I expected it to be way thicker. Still glorious and a huge amount. I had a hilarious time trying to freeze it as I thought I was so clever and used my new silicone ice cube trays. I intended to then pop out the “caramel cubes” and keep them in a plastic bag. Except they did not actually ever fully freeze and stuck to the inside like I had added peanut butter. I never stop learning lol. Also happy to learn about Sugar Bee apples – had not heard of them before and will be checking out my Costco. Yay autumn and yay cake.
