World Peace Cookies 2.0

Baking with Dorie World Peace Cookies 2.0 page 160.

We have made World Peace Cookies before, once from Dorie’s Cookies and once from Baking From My Home to Yours.

These chocolate sable cookies are not only delicious but complex. Ingredients include all-purpose flour, rye flour, Dutch-processed cocoa (I used regular cocoa), butter (lots of it), brown and white sugar, pinch of cayenne which we did not taste, vanilla, chocolate and freeze-dried raspberries. I wanted to try cocoa nibs but try as I might I could not find any so I just left them out.

There was a lot of discussion on how to slice and bake these cookies, I have not had any issues with that so I was a bit confused. I made the cookie dough and refrigerated overnight. I sliced and bake the next day. I will say that I don’t use a chef’s knife, I use a boning knife that is very thin so there is no friction. It makes slicing much easier.

  1. I think I would refrigerate only next time rather than the freezer…that and a special knife like the one you have haha!

  3. The issue with the original instructions is that it calls for FREEZING the logs and slicing them which is impossible! Refrigeration is the way to go! Yours look lovely!
