My Favorite Pumpkin Pie

Out of all the things we bake in this group I would say that pies are my weakest dish especially the crust. Rolling the dough and preventing the shrinkage in blind baking are still elusive to me. Since my crust shrunk I had extra filling enough to fill two 8 ounce ramekins, my husband wasn’t complaining with the extra filling.

This pie made an appearance for our Friendsgiving dinner along with the Fall Harvest Cake.

I think I over baked my pie but no one complained. It was a rich pie with heavy cream and sour cream. Since I have a few family members that are pumpkin haters I usually make other pies but this pie can make an appearance for other gatherings.

  1. a friend of mine told me that she didn’t feel like making pie crust this year, so she did a biscoff crust for her pumpkin pie…i think that may be the way to go in terms of ease and taste
