Custardy Apple and Kale Cake

This week’s selection comes from the Salty Side Up, of Baking with Dorie. She describes it as almost pudding, hum how intriguing.

Baking with Dorie page 334.

The recipe calls for an 8-inch springform but I only had a 9-inch one. I decided to use my 8-inch cake pan so the dish would be the right size. I didn’t want a flat cake. I used plenty of parchment paper so it would not stick and that worked perfectly.

The ‘cake’ portion included flour, baking power, salt and pepper. The savory ingredients were shallot, shredded kale, and olive oil. Two eggs and 1/3 cup of milk are added as well as 2 large apples chopped in my case honey crisp and shredded cheddar cheese. I was very curious on how all these ingredients were going to come out.

We were all pleasantly surprised with this one, it was delicious. I had been avoiding this recipe because I couldn’t see how all these ingredients would come together but they did. We really enjoyed this and would make it again. To see what others thought head over to Tuesdays with Dorie.

  3. Looks yummy. I really had it in my head that this was going to be a quick bread-style cake (because I didn’t actually read the recipe till I needed to buy stuff for it), but was happily surprised by this one.
