Coffee Shortbread

We have made several shortbread cookies in Tuesdays with Dorie. This is an easy cookie to make especially when made in a cake pan. Butter, sugar, flour are the main ingredients and then this one is flavored with coffee, lemon and cardamom. My husband is not a fan of cardamom but I used half the amount and he was none the wiser. The dominant flavor is the lemon rind and I was also a little heavy handed with it. The most difficult part was frosting the cookies. It is a stiff frosting and took quite a bit of wrangling to get it on the cookie. I think mine look like a kindergartener did it. Final touch was sprinkling some instant espresso powder on top. These were well received and since I only cut them in 8 pieces instead of 12 they went fast. To see what others thought head over to Tuesdays with Dorie.

  1. I bet people were pretty enticed by the icing, actually. I left out the white and just made a basic powdered sugar and milk one.

  2. These are easy shortbread cookies to make, made easier by skipping the icing all together, which is what I did. I bet they taste delicious, nonetheless.

  4. I like your idea of only cutting 8 hahaha…these were good. I am glad you could taste the lemon, seemed like I was in the minority on that with the group and yet it was what everyone who tried mine noticed haha 🤷‍♀️
