
This is my third post on Rugelach from Dorie’s cookbooks. This current recipe from Baking with Dorie has the choice of four fillings. I chose to do two of the four; classic filling and the babka filling. I adjusted the classic filling to include orange marmalade, sugar/cinnamon, and dried cranberries, I left out the nuts and chocolate. I was making these for Christmas dinner so I prepped them all in advance so I only had to bake the day of. I seem to be unable to roll out dough in a square or rectangle, it usually looks like a blob so I went with the circle method. I used a pizza cutter and made the classic crescent shape. I filled the dough, rolled and then chilled overnight which made it very easy the next day. Surprisingly, my sister and her family had never heard of rugelach before so we had to educate them. I think I made converts of all them as most disappeared. I still have four ounces of cream cheese in my refrigerator which will be used for another batch. They look good! I think I should have gone the crescent shape like you!! I had never heard of rugelach before this baking group either…and my tasters are big fans now too!
