Parfait-Layered Vacherin

Any time Dorie gives the option of ice cream, I am going to take it every time. I made the easy version and bought Trader Joe’s Vanilla Meringues. I told my husband to pick out which ice cream flavors he wanted, he chose coffee and vanilla. We are making lemonade out of lemons; since our son is moved out we are choosing flavors he would not like so coffee ice cream it is. I was also able to top the dessert with almonds and not worry about his nut allergy. I made Dorie’s caramel sauce which went so well with the dessert. This was delicious and enjoyed by all. When I need a quick dessert I will keep this in mind especially during the hot summer months.

    Looks beautiful…that drippy sauce photo is making my mouth water. I smiled about when the kiddo leaves home you can have the flavors you like. That happened here, too, but it also went the other way…I now have no one who will eat Asian food with me…Matt and I are big fans, Mark not so much. When Matt is home or we are there…first order of things is usually Chinese or Thai! Your Vacherin is really very pretty.

  2. i like this “lemonade” version- coffee is a favorite of mine as well (and that pool of caramel is especially appealing)
