Strawberry-Rhubarb Squares

Strawberry-Rhubarb Squares from Baking with Dorie page 112.

I am certainly having trouble getting back into the swing of things post vacation, post cold, etc…

This week’s baking assignment for Tuesdays with Dorie called for rhubarb which I was unable to find, we went to three grocery stores. I ended up just using sliced strawberries. We actually thought this cake was pretty plain so maybe the rhubarb was key. I may try making again when we find the elusive rhubarb.

  1. I am sure after such a fabulous trip it would be hard to get back into your routine. Hope it was a blast. So funny about the rhubarb…finally found it at pavilions 🤷‍♀️. I am not sure you needed it but probably needed more fruit in general. Mine was piled high before the baking…couldn’t see any of the batter. I thought it seemed like too much but I think it is needed to have enough when it reduces down in the baking. That might help in case you try this one again. Hope you feel better soon.

  3. It’s always an adjustment to get back to the home routine after a vacation. The fact that you bake this cake, kudo to you. I haven’t seen rhubarb until yesterday, the season hasn’t quite gotten here yet. I agree that flavor-wise, the cake is rather plain. You got colors!
