
The last time we made cream puffs with a crackle top was in 2019 from Baking Chez Moi. According to my blog I had a migraine that day and my husband made them which I totally forgot. So I guess this is my first time to make these, well not really.
I have another funny story, I work for a skilled nursing center and cream puffs are on their dessert menu but the last time I saw them they did not resemble a cream puff. I told the kitchen supervisor to take the cream puffs off the menu until I could teach the cooks how to make them properly. I took home their recipe and made 10 by hand and they came out perfect. I took the cream puffs to work the next day to show the cooks how they are supposed to look then I filled them with whipped cream and shared them with the staff. My teaching will have to wait until after I get back from vacation.
On to the recipe at hand. I did not have any issues making the cream puffs. I did not roll my crackle topping thin enough as many of the cream puffs did not rise much. We enjoyed these and I will be making and teaching these again. I am currently on a cruise ship and headed to Norway, it may take me a bit to comment on your blogs. Tuesdays with Dorie.

We spent weeks in Norway vacationing and hiking last summer. Scenic and outdoorsy; I had a grand time there. The food I enjoyed the most was a fish chowder: more fresh salmon than I’ve found in a bowl of soup. Have fun, Diane! Love your story about making cream puffs at the nursing center.
