
I am of the opinion that everything is better with goat cheese so I was looking forward to our latest recipe from Baking with Dorie (page 305). I had to make one substitution, mint is one of those herbs I cannot use with my husband so I used basil instead. The recipe calls for 4 ounces of goat cheese and I was tempted to put in my whole 5 ounce log from Trader Joe’s but I am glad I didn’t, 4 ounces was plenty. I saved a few pieces to put on top so they wouldn’t all sink to the bottom, also glad I did that. I loved this including the lemon zest but my husband oddly enough did not like the addition of the lemon. I only used the zest of half the lemon as that is all I had but I am glad I did since my husband did not like that flavor. I will happily make this again when I have an itch for some goat cheese. It is always such fun to hear how people change up a recipe and get results they either liked or didn’t like. I love the look of all those big goat cheese pieces on the top of your bread…big goat cheese fan here. And the basil sounds like a wonderful choice. I can see myself playing around with additions on this one…maybe some sun-dried tomatoes in there with the basil and goat cheese…yum. Beautiful photo.

Goat cheese in bread, the first time using it in bread. Goat cheese does make the bread more flavorful and distinctive. I like the bread more than my husband does. Taste is such a personal thing, isn’t it?
