August is a busy month for us, we have many family birthdays including our son who just turned 20! My how time flies. This Strawberry Cheesecake-Chocolate No-Bake Pie from Baking with Dorie was the perfect summer dessert and also worked well for a birthday celebration.

I made my graham cracker crust but you could buy one to make it truly a no-bake pie. The chocolate ganache was easy to make and delightful to eat 🙂 Fresh strawberries are the nice surprise in the middle. The cheesecake layer is made of white chocolate, cream cheese, sugar, vanilla, ricotta cheese and heavy cream whipped up to stiff peaks. The cheesecake part is a nice light texture compared to the cooked version. We all enjoyed this sinfully rich dessert and a nice way to wrap up our August baking.
