
Our latest recipe with Baking with Dorie is this double corn and tomato crisp. This was a surprise hit with the family especially with so few ingredients. The filling comprises of ripe tomatoes, corn, onion, olive oil, sherry or balsamic vinegar, honey, salt, pepper, cayenne and basil. The topping which is the star of the dish in my opinion 🙂 consists of yellow cornmeal, flour, sugar, salt and butter. My husband and I could not get over how good this was getting better with every bite, we even went back for seconds. I can’t wait to make this again. I think I am going to bring this to our next backyard cookout even if I have to buy frozen corn to make it. This is going to be a new family favorite. This was interesting – and tasty. Just don’t know I’d want to put on the oven in a hot summer for that long again. But it’s up my sleeve for the winter!
