Lamingtons

National Lamington Day celebrates an iconic Australian dessert. It is observed every year on July 21. In honor of this day we are making Lamingtons for Tuesdays with Dorie. Lamingtons are cubes of cake usually sponge covered in chocolate and coated with unsweetened coconut. This is a new dessert for our household but we were all looking forward to it.

My genoise cake baked up perfectly, it did not dome and sliced very easy after a night on the kitchen counter.

For the first half of my cake, I used the fork method to toss the cake pieces in the chocolate sauce. My chocolate sauce seemed to be very thin and the cakes soaked up quite a bit. I ended up having to make more sauce to finish the second half of my cake. I used the finger method on the rest which I think worked much better.

The coated cakes are then tossed into unsweetened coconut.

The finished cakes are left on a baking rack for an hour before serving.

These were a very different dessert. I was worried I would have a soggy mess but they were not. We enjoyed having something new but I don’t think it will be a fan favorite. To see what others thought head over to Tuesdays with Dorie.

  1. Yep, this sauce is definitely thinner than I am used to. I have NEVER (as an Australian) celebrated Lamington Day on July 21st LOL! Yours look PERFECT!

  3. these looks os good– they are a fave of mine for sure. I’ve made them at home several times using various recipes and I agree with Mardi that this glaze was on the thin side (and I also needed extra).
