I included all the ingredients in the recipe except celery which I forgot to buy. I assembled everything in advance except the squid which my husband wanted to add right after cooking. I served this over a bed of iceberg lettuce with some bread for a light dinner. I found eating this dish quite laborious, I had trouble keeping the ingredients on my fork. I ate the leftovers without the lettuce which I liked better. This was a colorful dish with plenty of fresh ingredients but I think we are a fried calamari family and not a squid salad lover. Funny that you say this because I offered it might be good on some brown rice…might be easier to eat that way 🤷♀️ We thought this was good but not sure I would repeat it. I think the seafood mixture might have helped too so it wasn’t all squid.

Among the few fried things we like, calamari is on top. I’ll take calamari anytime!
