Beet Fennel Soup

This week’s selection is from Dorie’s cookbook, Everyday Dorie. When this selection was chosen, I actually had beets and Persian cucumbers on hand. I wanted to try cold soup but it was a rainy day and my husband wanted hot soup. We love beets in our house usually with a salad and goat cheese. We have had various kinds of cold fruit or vegetable soup but never a beet soup. It sure looked pretty and the sliced strawberries and cucumbers were a welcome addition. I did not particularly like the soup hot, I would like to try again someday with the cold version. To see what others thought head over to Cook the Book Fridays.

  1. I had it hot when it’s freshly done. The addition of yogurt gives it a hot-cold combo which is quite delightful.
