Granola-Topped Squash and Root Vegetable Gratin

Happy Thanksgiving! I made this gratin as part of our recent Friendsgiving. It was well received and disappeared. I did not care for the granola and neither did my son who passed on this dish but my husband welcomed the texture it added to the dish. I also did not like the two step process of steaming the vegetables before roasting. We are making this dish again for our family Thanksgiving meal but I am only putting granola on half 🙂 To see what others thought head over to Cook the Book Fridays.

  1. I didn’t care for it either, although I like the granola on its own.


  2. We thought the granola was odd on top too…I didn’t steam the veggies just roasted and it worked out perfectly.
