Zan’s Birthday Cookies

To enjoy this cookie you need to be a chocolate and coconut lover. This is a three layer cookie; brownie-like bottom, coconut cream center and a chocolate crumble topping. All the layers need to be prepped in advanced and chilled. I made all three layers in one day and then baked the following day.

A word on amounts. I made a full recipe as I always have friends and family to share my baking. The full recipe was to make 24 cookies. The brownie base I was able to get 36 cookies from using a 1 1/2 tablespoon scoop. The coconut cream I was able to get 24 servings using a 2 teaspoon scoop. Finally, the chocolate crumble I mistakenly made a full recipe when I should have made a quarter. Dorie states it makes extra which I did not need. My only beef with this recipe is I wish all the components make the same amount of cookie.

As my fellow bakers concluded, these cookies were worth the effort and I whole heartedly agree. I thought these cookies were best still warm from the oven. To see what others thought head over to Tuesdays with Dorie.
