Almond Crackle Cookies

Looked good coming out of the oven.
Getting them out of the tin proved problematic.

This week on Tuesdays with Dorie we are baking from Dorie’s Cookies. These Almond Crackle Cookies are simple to put together as they have only three ingredients; almond, sugar and egg. After reading the reviews of my fellow bakers I decided to do the muffin pan route to prevent the spread from free form but I think that was a mistake. The crackles stuck in the pan even though I sprayed. I did not have bakers spray which I think includes flour? Maybe that was the error. I ended up with many of them being granola instead of cookies. The cookies that made it out intact were good and enjoyed. If I make these again I will do free form. To see what others thought head over to Tuesdays with Dorie.

  2. i had a few that stuck, too, but i liked the shape of the ones i got out intact. next time i’ll be sure to very throughly butter.
