Rousquilles

First batch of cookies which I over baked, they look molasses in color.

Instead of making little wheels (rousquilles means little wheels) I made hockey pucks. Since 1 3/4 inches seemed so small to me I didn’t feel like doing the center cut out. The first batch I made I cooked the full 18 minutes, this resulted in burnt cookies. So Mardi you are not alone with the biscotti texture. The second batch I made I cooked a lot less which seemed to help. I also think that I rolled my dough too thin since I got much more than 30 cookies.

I made the egg white glaze, my husband helped me which made it easier. I whipped the egg whites while he watched the thermometer then I mixed while he poured. Voila we got perfect glaze. I slathered my cookies with glaze since it made so much. We were joking about what else we could use this glaze for, spackle anyone? To see what others thought head over to Tuesdays with Dorie.
