Biarritz Cookies

This week on Tuesdays with Dorie we are baking from Dorie’s Cookies. Biarritz cookies are a soft cookie made from almond flour, flour, confectioners’ sugar, butter, milk, egg whites that have been whipped up and sugar. The cookies are then pipped on to a tray. I followed Dorie’s instructions and made my first batch the size of a quarter but I thought they were too small. My second batch I made them much bigger which I liked better. The cookies can be eaten plain, topped with chocolate or sandwiched, I took the sandwich route. I thought the naked cookies tasted too plain. We enjoyed the sandwiched cookies especially the chocolate filling. Soft cookies are not my preference so I don’t think I will make them again.   1. Can’t wait to make these next week! I’ve made a version of them before using langues de chats as the cookies and I love them! Thanks for the tips re: sizing!
