Fruit and Nut Croquants

Fruit and nut croquants are everything my husband loves in a cookie; orange, almond and raisins. I used all the optional ingredients in this cookie; orange rind, nutmeg, almond extract and cloves. I took Dorie’s advice “go heavier on the nuts than the fruit” and added 5 ounces of whole almonds with skin and 3 ounces raisins. From the reviews of my fellow bakers I baked the cookies for the full 50 minutes because I like crunchy cookies and I knew they would soften a bit over time.

Vanilla Pots de Crème

These croquants went over to my in-laws along with vanilla pots de crème. I used whole vanilla beans in making this latest bonne idée. My husband said I should open a pots de crème shop as this is an untapped market. I am glad that everyone is enjoying my baking journey. Just ten recipes to go on completing Baking Chez Moi.   3. I can’t believe we are so close to finishing another cookbook! I think my husband and son would agree with your family…that there is an untapped market for these pots de créme!

  4. your husband always has good comments! even in nyc, where there seems to be a shop for every concept, there is no pots de creme specialist! i liked both of these treats as well. the cookies lasted me for almost a week of coffee-time snacks.
