For this recipe I had to turn to Dorie’s “playing around” section. I had fully intended to make the lemon-poppy seed version but I discovered that I did not have poppy seeds or lemon extract. I did have, on the other hand, orange extract so I went with orange shortbread. I would have preferred to make the espresso shortbread but I knew my son would not eat it and I did want to make something he would enjoy, mostly so I wouldn’t eat them all:)

These had a wonderful orange flavor and as shortbread goes they are very buttery. A lovely cookie with a cup of coffee. I did not miss the poppy seeds or the icing. To see what others made head over to Tuesdays with Dorie.
